Golden Pancake Puffs - a sweet cross-over between Dutch Baby, Yorkshire Pudding and Kaiserschmarrn

This recipe combines the best of all three, resulting in a fluffy, golden-brown pancake that’s both comforting and indulgent.

What are Golden Pancake Puffs?

Let me come clean here: I made that name up myself! And the recipe, too!

What happened? The birth of a new dish :)
Last weekend, after having indulged in (aka gorged myself on) on Sunday Roast, featuring my delicious Yorkshire Puddings I was hit by the sudden desire for Kaiserschmarrn.
(If you haven't had it before: it's a German/Austrian delicacy of a thick (raisin) pancake, shredded and caramelised, dusted in icing sugar and usually served with fruit compote or cream)

So the idea sparked in my mind: what if I could combine the best of both worlds and add a sprinkle of Dutch Babies to the mix? What if I could somehow merge the three into one extraordinary dish?

The more I thought about it, the more excited I became. The result? A fluffy, golden-brown pancake with a crispy exterior, similar to a Yorkshire pudding. When you cut into it, it has the chewy texture of a Dutch Baby, and the delicious pancakey raisin / almond taste of Kaiserschmarrn - served with a generous dollop of fruit compote, whipped cream, ice cream or a drizzle of maple syrup.

So today you I am sharing this recipe and hope it brings you as much joy as it does me.

One thing I particularly love is that with the Puffs being baked in individual tin holes, you can get really creative with the ingredients to suit the preferences of everyone. So why not make one with raisin, one with almonds, one with both, one plain, one with - whatever you can dream up :) Get creative and enjoy!


The recipe is super easy to make and very low effort, too! I am sure you will love it!

By the way: in the meantime I learnt about the existance of a dish called 'popover' which is indeed very similar to my Pancake Puffs.

Ingredients

  • 150g plain cake flour (*not* self rising)
  • 4 eggs
  • 200ml milk
  • 2 tsp sugar
  • 1/2 tsp salt
  • vegetable oil for the muffin tin
  • icing sugar
  • 6 tsp raisins (optional)
  • 6 tsp almond flakes (optional)
  • fruit compote (optional)

Instructions

  1. Preheat your oven: Crank your oven up to 210°C (410°F).
  2. Prep the tin: Drizzle about 1-2 tsp of oil into a 6 or 8 hole muffin tin and pop it in the hot oven to warm up.
  3. Mix the batter: In a bowl, whisk together the flour, salt, sugar and eggs, then gradually add the milk until you have a smooth, lump free batter
  4. Pour and bake: Carefully pour the batter into the hot tin, filling each hole about two-thirds full.
  5. Optional: sprinkle approx one teaspoon of raisins and/or almond flakes on top
  6. Pop the tin back in the oven and let it work its magic for about 20 minutes. The puffs are ready when they are a dark golden brown and have risen considerably.

  8. They should remain a bit chewy on the inside.

  10. Immediately take out of the tins and let sit on a kitchen towel to absorb the excess oil.

  12. Dust with icing sugar and serve with your favourite fruit compote, ice cream, whipped cream or whatever deliciousness you can think of <3
