Easy foolproof no-knead soda bread

How about a warm, soft and delicious bread that is not only absolutely foolproof but also literally zero effort?
You don’t believe that’s possible? I’m here to tell you otherwise.

I make this soda bread at least once a week and it has yet to fail me (full disclosure: I did burn it once when I got side tracked in a phone call, and my significant other managed to put 1.5 table spoons of salt in it rather than tea spoons, rendering it inedible, but we can hardly blame the recipe for our own mistakes).

Baking bread doesn’t get any easier than this! My recipe requires a prep time of just five minutes and no kneading, resting or proving. You simply mix all the ingredients together, shape a loaf and pop it in the oven. All you have to clean up is one mixing bowl, that’s it! And after 45-50 minutes baking time, you are rewarded with the most delicious bread that will have everybody raving.

Good to know about this recipe

Apart from the basic ingredients, you can add up to 100g of nuts, seeds or dried fruit without having to change the amount of liquid and without it interfering with the bread’s structure.
My favourite additions are hazelnuts (whole or chopped) and/or pumpkin seeds. Use whatever your favourites are!

By the way, this bread is perfect on its own as well as for scooping up delicious sauces, like for instance with my delicious Shakshuka breakfast recipe or Cilbir - Turkish Eggs. Mmmh, so yummy!

Baking bread doesn’t get any easier than this! My recipe requires a prep time of just five minutes and no kneading, resting or proving. You simply mix all the ingredients together, shape a loaf and pop it in the oven. All you have to clean up is one mixing bowl, that’s it! And after 45-50 minutes baking time, you are rewarded with the most delicious bread that will have everybody raving.

Ingredients

  • 250 g bread flour / all purpose flour (type 550 if you are in Europe)
  • 250g whole grain flour (I use whole grain spelt)
  • 100g oats (coarse)
  • 500ml buttermilk
  • 25g cold butter in small chunks
  • 1.5 tsp salt
  • 1 tsp baking soda
  • (optional: up to 100g of nuts, seeds or dried fruits. I often use hazelnuts)

Instructions

  1. preheat oven with baking tray on 175°C / 350°F
  2. add all dry ingredients to a large mixing bowl and combine well
  3. cut the cold butter into small chunks and stir in the dry ingredients
  4. pour in the buttermilk and combine everything well with a silicone spatula or your hands
  5. on a sheet of baking paper, shape a circular loaf
  6. with a spatula, slice loaf in 6-8 pieces like you would with a cake, but do not separate
  7. place dough with baking paper on the hot baking tray and bake for 45-50 minutes
  8. the bread is ready when it sounds ‘hollow’ while thumping the bottom of the loaf with your fingers
